Creamy Chicken Orzo
A simple, one-pan comfort meal with fresh and sun-dried tomatoes
There’s something about a creamy, cheesy pasta that just feels like home. This chicken orzo is rich, flavorful, and surprisingly easy to make — perfect for a cozy weeknight dinner.
Ingredients
2 chicken breasts, cut into bite-sized pieces
2 cups chicken broth
1 cup orzo
½ cup Parmesan, grated
¾ cup heavy cream
1 handful spinach, chopped
1 small yellow onion, diced
½ cup sun-dried tomatoes in oil, chopped
½ cup cherry tomatoes, halved
4 cloves garlic, minced
1 tbsp butter
Seasonings: salt, black pepper, paprika, smoked paprika, onion powder, oregano, Italian seasoning
Instructions
Melt butter in a pan over medium heat. Sauté onion until soft.
Add chicken and a little sun-dried tomato oil. Cook until mostly done.
Stir in garlic and continue cooking until chicken is cooked through.
Add cherry tomatoes and sun-dried tomatoes. Stir for a minute.
Add orzo and chicken broth. Cover, simmer 10 minutes, stirring occasionally.
Remove lid, lower heat. Add spinach, cream, and Parmesan. Stir until creamy and spinach is wilted.
This recipe makes 2–3 servings of creamy, comforting goodness.
Serving suggestion: Pairs perfectly with a fresh lamb’s lettuce salad with onion, and of course, a glass of your favorite wine.
